Bonds Restaurant & Bar is part of The Eton Collection, a chic, unique, boutique hotel group with hotels and restaurants in London and Edinburgh.
The Eton Collection is owned by Westmont Hospitality Group and comprises four boutique hotels in London and Edinburgh including its flagship hotel, Threadneedles in the City of London.
The group also comprises The Academy in London's Bloomsbury, The Colonnade in Little Venice (London) and The Glasshouse in Edinburgh.
Westmont Hospitality Group has had an ownership interest in and operated over 1,100 hotels to date, with over 500 hotels across three continents at present.

Since opening in 2002, Bonds has listened to the needs of The City, tweaked and perfected the menu and wine list, and has received the commendable AA Notable Wine List and rated highly in the Zagat surveys.
Head Chef, Barry Tonks
Tonks has been cooking in some of London's finest kitchens for ten years. He began his career in the capital at The Dorchester hotel and then went on to work at two Michelin Star restaurants- Chapter One and Putney Bridge. He then became Senior Sous Chef at The Landmark under John Burton-Race where his restaurant had earned two Michelin Stars. His first Head Chef position was at McClements in Twickenham where he quickly made a big impression, earning his first Michelin Star, three AA Rosetta's, and a seven out of ten in The Good Food Guide, putting them in the top 25 rated restaurants in the UK. Now, Barry is set to make The City a dining destination in its own right with Modern French cooking that is nothing short of perfection.
Restaurant Manager, Nelio de Abreu
Nelio thrives on empowering his team, and enjoys the interaction with guests from all walks of life. Nelio heralds from London's finest establishments carving his career from The Ritz, Mandarin Oriental (Hyde Park), John Burton-Race at The Landmark (two Michelin Stars) and more recently at Colette's at The Grove in Hertfordshire and Chewton Glen Hotel and Spa in Hampshire. The wine list in Bonds is ever-improving due to Nelio's love and fascination of wines. Look out for the additions to the New World Wine list which will encourage guests to be more adventurous.
Mixologist/Bar Manager, Brian Calleja
Brian and his crew can ably make most Classics, the cocktail menu tends to be somewhat more adventurous, mostly on using high quality ingredients and culinary to fuel unique compositions. Prior to joining Bonds, Brian held the position as Bar Manager at L’Atelier de Joel Robuchon in Soho and also worked for splendid Hotels like the Conrad Hotels & Resorts as well as Gleneagles Hotel in Scotland. Brian was trained in the International Tourism studies of Malta and continued his profession with the IBA (International Bartenders Association) in Italy.
